There is so much you can do with watermelon! From quick mint, feta, and watermelon bites for those hot days or mix it with cucumbers, red onion, and arugula for a refreshing salad!
Ingredients
3 cups watermelon, cubed
1 cup feta cheese, cubed or crumbled
1/2 cup mint leaves, whole or chopped
1 cup cucumber, cubed
1/2 cup red onion, thinly sliced
1/4 cup extra virgin olive oil
2 tbsp red wine vinegar
OPTIONAL Dash of sea salt Arugula salad
Directions
For appetizer bites: Combine the first 3 ingredients and hold together with a toothpick
For a salad: whisk oil and vinegar with a dash of salt.
Add all ingredients, toss and coat with dressing.
