This shrimp scampi is super easy and I served it over It's Skinny fettuccine faux pasta.

Ingredients

  • 1 pound shrimp, peeled and deveined (I purchased mine already peeled and deveined)

  • 2 tablespoons olive oil

  • 5 tablespoons unsalted butter

  • 2 tablespoons minced garlic

  • 1/3 cup seafood stock

  • 1/2 teaspoon red pepper flakes

  • 1 tablespoon parsley, chopped

  • 1 tablespoon parmesan cheese

  • Black pepper to taste

  • 2 tablespoons lemon juice plus zest of one lemon

Directions

  • In a large skillet, melt 4 tablespoon unsalted butter and the olive oil over medium heat. Add garlic and red pepper flakes and cook for 2 minutes, stirring often.
  • Add in the seafood stock and simmer for an additional 2 - 3 minutes.
  • Add the shrimp and season with the black pepper. Cook shrimp on one side for 2 minutes then flip and cook for another 2 minutes or until shrimp is no longer pink.
  • Stir in remaining tablespoon of butter, lemon juice and the zest of 1 lemon.
  • Remove from heat and garnish with parsley and parmesan cheese.

  • Yields: 4 - 8 ounce servings - 201 calories, 10.78mg fat, 196mg sodium, 2.25g carbohydrate, .2g fiber, 2.23g net carbs, .27 sugars and 24.52g protein.
