kcalThis shrimp scampi is super easy and I served it over It's Skinny fettuccine faux pasta.
1 pound shrimp, peeled and deveined (I purchased mine already peeled and deveined)
2 tablespoons olive oil
5 tablespoons unsalted butter
2 tablespoons minced garlic
1/3 cup seafood stock
1/2 teaspoon red pepper flakes
1 tablespoon parsley, chopped
1 tablespoon parmesan cheese
Black pepper to taste
2 tablespoons lemon juice plus zest of one lemon
