These delicious tots are made with radishes instead of potatoes. The radish loses its bite when cooked. Great for a side dish!

Ingredients

  • 1 pound radishes, shredded

  • 1 teaspoon sea salt

  • 1 tablespoon Carbalose All Purpose Flour

  • 2 large eggs

  • 1 cup shredded sharp cheddar - I like to shred my own

  • 1/2 cup chopped sweet onion - I used my handy chopper

  • 1 teaspoon paprika

Directions

  • Preheat oven to 400 degrees and grease a 24 cup mini muffin pan with cooking spray.
  • Shred the radishes in a food processor or buy pre-shredded and place in a bowl and toss with the salt. Let them set for about 15 - 20 minutes then squeeze out excess moisture. Discard the liquid.
  • Sprinkle the radishes with the Carbalose and toss to coat.
  • Add the eggs, cheddar, onion and paprika and mix well to combine.
  • Fill each muffin cup with about 1 1/2 tablespoons of mixture.
  • Bake in the oven for 15 to 20 minutes or until golden brown.
  • Let cool for a minute and remove from muffin tin with a teaspoon or other small spoon.

  • Yields: 24 tots - 64.5 calories, 4 fat, 18.5mg sodium, 4.8g carbohydrate, 1.9g dietary fiber, 2.9g net carbs, .5g sugar and 4.85 protein.
