Keto Ground Beef Stroganoff

This recipe totally satisfied my craving for beef stroganoff. You can serve on a bed of cauliflower rice or Skinny Pasta.

Ingredients

  • 2 tablespoons butter

  • 1 teaspoon garlic, minced

  • 1 pound 85% lean ground beef

  • 2 cups shiitake mushrooms, sliced thin

  • 1 cup sour cream

  • 1/2 cup cream cheese, softened

  • 1 tablespoon lemon juice

  • 1 1/2 teaspoons smoked paprika

  • 1 tablespoon gravy master (optional)

  • 1 tablespoon fresh parsley, chopped

Directions

  • Melt two tablespoons of butter over medium heat.
  • Add in garlic and stir for 1 minute.
  • Add in ground beef and break up with a spatula or spoon.
  • Remove ground beef and drain - reserve a little oil in pan.
  • Move pan back to heat and add in 4 tablespoons of water and the mushrooms. Cook for about 5 minutes or until softened.
  • Remove mushrooms and add to the ground beef.
  • Move pan back to heat and add in cream cheese over medium to low heat until creamy.
  • Add in sour cream and stir together.
  • Add in gravy master and lemon juice and turn the heat up to medium.
  • Add the ground beef and mushrooms back to the pan.
  • Sprinkle with the smoked paprika and stir until mixture is creamy.
  • Remove from heat and sprinkle with fresh cut parsley.
  • You can also add a dollop of sour cream but this is not included in the nutritional value.

Notes

  • Yields - 5 - 3/4 cup servings. 494 calories, 36.9g fat, 426mg sodium, 11.8g carbohydrate, 1.5g fiber, 2.4g sugars and 29.6g protein.
