Garlic Cauliflower Mash

Garlic Cauliflower Mash is a great substitute for mash potatoes. Adding in the Cannellini beans gives it a silky texture.

Ingredients

  • 4 cups fresh cauliflower, stems removed

  • 2 T salted butter

  • 1 T fresh parsley, diced

  • 1 T garlic, minced

  • 1/2 cup half and half

  • 1/2 cup Cannellini beans

  • 1 teaspoon salt

  • 1/2 teaspoon ground black pepper

  • 1 T chives, chopped

Directions

  • Bring a large pot of water to a boil.
  • Remove cauliflower from the head and cut off the stems. You should have about 4 cups from one head. Once the water begins to boil, drop in the cauliflower and boil for about 20 minutes. It should be soft when you stick it with a fork.
  • While cauliflower is boiling, mix together all other ingredients (except the chives) in a mixing bowl.
  • Remove cauliflower from heat, drain and allow to cool a little.
  • Pour cauliflower in the mixing bowl and using a hand mixer - blend all of the ingredients together until creamy. You can add more half and half if you need to.
  • Place into a serving dish and reheat in the microwave for 2 minutes. Sprinkle with chives and serve.
