I love egg rolls but I do not like the added calories from the fried wrap. Egg Roll in a Bowl gives you the taste of an egg roll and will keep you on your plan! Feel free to add some hot mustard.

Ingredients

  • 1 pound ground turkey

  • 3/4 cup sweet onion, chopped

  • 1 T sesame oil

  • 1 T rice vinegar

  • 1/4 cup low sodium soy sauce

  • 2 T hoisin sauce or stir fry sauce

  • 2 t fresh ginger

  • 6 cups shredded cabbage (about 1 head)

  • 1 cup grated carrots (about 2 carrots)

  • 2 eggs

  • 1 T sesame seeds

  • 1 spray of vegetable oil cooking spray

Directions

  • In a large wok over medium-high heat. Add ground turkey and cook until it's no longer pink.
  • Add in chopped onions, sesame oil and rice vinegar. Cook about 3 - 4 minutes until onion is translucent.
  • Add soy sauce, hoisin sauce, garlic, ginger, cabbage and carrots to the wok. Cook, stirring for about 5 - 6 minutes until carrots and cabbage are tender. Turn down heat.
  • In a separate bowl, whisk together two eggs. Push the mixture in the wok to the side, turn up the heat to medium and fry the egg in the wok. Then incorporate it into the rest of the recipe.
  • Sprinkle with sesame seeds and serve.

  • Yields - 6 - 1 cup servings - 218 calories, 10.5g fat, 565.2mg sodium, 12.4 carbs, 3.4g fiber, 9g net carbs, 6.4g sugar and 19.7g protein.
