Creamy Asparagus Soup

This creamy soup is great for a cold winter's night or anytime! You can add a dollop of sour cream or Sherry if you wish and top off with some sprinkles of dill weed.

Ingredients

  • 1 pound asparagus, trimmed and cut into 1 inch pieces

  • 2 cups chicken broth, divided

  • 1/2 cup chopped onion

  • 2 T butter

  • 2 T Arrowroot flour

  • 1 tsp salt

  • 1/4 tsp black pepper

  • 1 cup half and half

Directions

  • In a sauce pan combine asparagus, onion and 1 cup chicken broth; cover and bring to a boil over medium to high heat. Reduce heat to simmer until asparagus is tender, about 10 minutes.
  • Transfer mixture to a bowl and puree using an immersion blender or transfer to a blender and puree.
  • In the same sauce pan, melt butter over medium to low heat. Stir in Arrowroot, salt and pepper and cook until smooth about 1 to 2 minutes, stirring constantly.
  • Add remaining chicken broth until the mixture boils, reduce heat and add in half and half and stir until creamy. Do not heat to a boil.
  • When serving, you can add in sour cream or Sherry and sprinkle with fresh dill. This is not included in nutrition analysis.

  • Yields - 4 - 1 cup servings - 217 calories, 14.3g fat, 739mg sodium, 16.4g carbs, 2.7g fiber, 13.7g net carbs, 7.5g sugars and 7.7g protein.
