This broccoli salad is tossed in a simple homemade dressing and tastes even better the longer it sits in the fridge!

Ingredients

  • 4 cups broccoli florets, cut into small pieces and stems removed.

  • 1/4 cup red onion, diced

  • 1/4 cup dried cranberries

  • 1/4 cup slivered almonds

  • 2 slices bacon, about 1/4 cup chopped

  • Dressing

  • 1/2 cup mayonnaise, I used Dukes

  • 1 T apple cider vinegar

  • 1 T Monk Fruit sweetener

  • 1 T Lemon Juice

  • 1/4 tsp salt

  • 1/4 tsp pepper

Directions

  • In a medium bowl, whisk together all of the ingredients for the dressing and set aside.
  • In a large bowl, combine broccoli, red onion, cranberries, slivered almonds and 1/2 of the bacon bits.
  • Pour the dressing over the mixture and combine well. Sprinkle the top with remainder of bacon bits.
  • Refrigerate 1 to 2 hours before serving.

Notes

  • Yields - 4 - 1 cup servings - 353 calories, 31.4g fat, 345.7mg sodium, 14.7g carbs, 3.2g fiber, 11.5g net carbs, 9.2g sugars and 5.7g protein.
  • You can refrigerate for up to 4 - 5 days. Gets better each day!
