Ham and Cheddar Egg Bites

These are great to have when having guests over or when you are meal planning for a week. Each egg bite packs 11 grams of protein.

Ingredients

  • Non Stick Cooking Spray for muffin tin

  • 6 slices or 3 ounces of black forest ham

  • 1/2 cup shredded cheddar

  • 6 large eggs

  • Sea Salt & Ground Pepper to taste

  • Chopped parsley, fresh or dried for garnish

Directions

  • Preheat oven to 375 degrees and grease a 6 cup muffin tin with cooking spray.
  • Line each cup with .5 ounces of thinly sliced black forest ham. About 1 slice if thicker.
  • Evenly sprinkle each tin with the 1/2 cup of cheddar.
  • Crack an egg into each tin cup - do not break the yolk.
  • Sprinkle with salt and pepper.
  • Bake at 375 for 25 minutes for a harder yolk or 20 minutes for a softer yolk.
  • Garnish with parsley and serve.
