Bacon & Pesto Deviled Eggs

Ingredients

  • 6 boiled eggs

  • 1/4 cup mayonnaise

  • 2 Tablespoons pesto

  • 1 T lemon juice

  • 3 slices of bacon

Directions

  • Boil eggs about 18 minutes and rinse with cool water when finished.
  • While the eggs are boiling, mix together the mayonnaise, pesto and lemon juice in a bowl.
  • Fry or microwave 3 strips of bacon. Allow to cool and crumble.
  • Peel the eggs, cut in halves and remove the yolk.
  • Add the yolks to the mayonnaise mixture and stir thoroughly until creamy.
  • Scoop the mixture into the egg halves, top with bacon and serve.

Notes

  • Yields 12 halves - 88 calories, 6.9g fat, 4.8g protein, 1.6g carbs, 0.1g fiber, 191mg sodium, 0.7g sugars.
