Ingredients

  • 6 eggs

  • 3/4 c coconut milk

  • 1/2 cheddar cheese, shredded

  • 8 ounces sausage, scrambled

  • 1/2 cup chopped spinach, fresh

  • 1 pinch of pepper

  • 1 t unsalted butter

Directions

  • Pre-heat oven to bake 350
  • Rub a 1 quart baking dish with the butter.
  • Crack the eggs in a mixing bowl and whisk together with the coconut milk and set aside.
  • Scramble the sausage over medium heat.
  • Add the shredded cheddar & chopped spinach to the egg and milk mixture and stir.
  • Pour egg mixture into baking dish and sprinkle evenly with the sausage.
  • Sprinkle with pepper.
  • Bake at 350 for 25 minutes or until the sides start to pull away from the edges.
