Summer squash and sweet potato soup is light, creamy and comforting. It's a nourishing soup that's perfect for a simple lunch or light dinner.

Ingredients

  • 1 T butter

  • 1 Vidalia onion, chopped

  • 2 1/2 cups chicken broth

  • 1 sweet potato, medium, peeled and chopped

  • 1 carrot, peeled and sliced thin

  • 4 cups yellow summer squash, sliced

  • 1 T maple syrup

  • 2 T basil, chopped

  • 1/2 t salt

  • 1/2 t ground black pepper

Directions

  • Melt butter in a heavy pot over medium heat. Add onions: cook and stir until softened, about 5 minutes. Add chicken broth and sweet potato; bring to a boil. Reduce heat to medium-low, cover pot and simmer, about 5 to 8 minutes. Add carrots and simmer, about 10 minutes. Add summer squash and simmer until all vegetables are tender, about 15 - 18 minutes.
  • Remove soup mixture and combine soup, maple syrup 1 T basil, salt, and pepper into a mixing bowl. Using an immersion blender, pulse until completely blended.
  • Makes 4 - 1 cup servings. Garnish with remainder of basil.

Notes

  • Yields 4 servings - 147 calories, 3.1g fat, 543mg sodium, 24.7g carbs, 3.5g fiber, 21.2g net carbs, 12.1g sugars and 6.5g protein.
