Low Carb Apple Crisp with Pecans

This is a quick and easy dessert for those Fall evenings or anytime you want to cure your sweet tooth. You could also add some whip cream if you wish!

Ingredients

  • 2 medium Honeycrisp Apples or any crisp, dense apple.

  • 1/2 cup raw pecans, chopped.

  • 4 tablespoons unsalted butter, melted.

  • 2 tablespoons monk fruit sweetener

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon ground nutmeg

Directions

  • Preheat oven to bake 350 degrees.
  • Peel, core and slice the apples. I used an apple slicer that made nine slices then I cut those in half.
  • Place the apple slices into four small ramekins or two medium size ramekins.
  • In a small bowl, mix the chopped pecans, melted butter, monk fruit sweetener, cinnamon, vanilla and nutmeg using a fork.
  • Pour the mixture evenly over each bowl of apples using a rubber spatula.
  • Bake the apples for about 25 - 30 minutes. Check on them at the 20 minute mark to make sure you do not burn the topping.
  • Remove from oven and allow to rest before serving.

Notes

  • Yield - 4 servings - 241 calories, 20.6g fat, 4.3g sodium, 15.1g carbs, 3.6g fiber, 11.5g net carbs, 10.4g sugars and 1.5g protein.
