There is so much you can do with watermelon! From quick mint, feta, and watermelon bites for those hot days or mix it with cucumbers, red onion, and arugula for a refreshing salad!

Ingredients

  • 3 cups watermelon, cubed

  • 1 cup feta cheese, cubed or crumbled

  • 1/2 cup mint leaves, whole or chopped

  • 1 cup cucumber, cubed

  • 1/2 cup red onion, thinly sliced

  • 1/4 cup extra virgin olive oil

  • 2 tbsp red wine vinegar

    OPTIONAL
    Dash of sea salt
    Arugula salad

Directions

  • For appetizer bites: Combine the first 3 ingredients and hold together with a toothpick
  • For a salad: whisk oil and vinegar with a dash of salt.
  • Add all ingredients, toss and coat with dressing.
