These hearty muffins are a satisfying breakfast option. You can make ahead and divide into containers for a quick and easy breakfast on-the-go. Ideal for brunch!

Ingredients

  • 12 eggs

  • 1 pound breakfast sausage

  • 1 cup shredded cheddar (I like to shred my own block)

  • 2 Tablespoons half and half

  • 1/2 teaspoon salt

  • 1/2 teaspoon pepper

  • 1/2 teaspoon onion powder

  • Olive Oil spray

Directions

  • Preheat oven to bake 350.
  • Lightly spray a 12-cup muffin tin and set aside.
  • Scramble the sausage over medium heat until done. Drain and set aside.
  • In a large bowl, whisk together eggs, half and half, salt, pepper and onion powder.
  • Add the sausage and cheese to the egg mixture and combine.
  • Pour the mixture into the muffin tin and bake for 25 minutes. Serve warm or you can cool and freeze them.
